I don't even remember now how I came up with this, may be it was when I was trying to come up with lighter cake, but it was instant success. I have made this so many times and recently almonds with white chocolate with lemon cream I got from Costco reminded me of this taste. Cant wait to make this one again. One of the lightest and fluffiest cake I have made.<br />

<strong>Ingredients</strong> <br />
1.5 Cup - 1.5 tbsp. maida<br />
1.5 tbsp Corn Flour<br />
1/4 tsp Baking Soda<br />
1/4 tsp Salt<br />
1.5 Cup + 1 tbsp Sugar<br />
2 Lemons<br />
3 Eggs<br />
1/2 Cup Oil<br />
1/2 tsp Vanilla Essence<br />
1/4 tsp Cream of tartar<br />
<br />
<strong>Method</strong> <ul><li>Preheat oven to 325F/165C</li>
<li>Sieve through maida, corn flour, baking soda, salt and 1.5 cup of sugar together</li>
<li>Separate egg whites from yolk.</li>
<li>Beat egg whites till they are foamy</li>
<li>Add in cream of tartar and beat till soft peaks are formed</li>
<li>Add in remaining 1 tbsp. of sugar and beat till hard peaks are formed. Keep aside</li>
<li>In a bowl beat egg yolk, zest of both the lemons, 1 tbsp. lemon juice, oil, vanilla essence and 2/3 cup of water together.</li>
<li>Add in the sieved flour mixture and beat till smooth</li>
<li>Fold in egg whites 1/3 at a time very gently till all the mixture is incorporated.</li>
<li>Grease 8.5inch loaf pan and pour the cake batter in it.</li>
<li>Bake in oven at 325F/165C for 45 minutes. Take out of oven and let it cool.</li>
</ul><p><strong>Notes</strong><br />
To measure maida and corn starch, first measure 1.5 tbps of corn flour and add it to the bottom of the cup and then add in more maida till it is 1.5 cup. 12 Oz Khawa<br />
1.5 Cup Sugar<br />
2.5 Cup Milk Powder<br />

Pinch of Cardamom Powder<br />

2 Spoon Pistachios<br />
Ghee<br />

<strong>Method</strong> <ul><li>Grate khawa and mix it with sugar, milk powder and cardamom powder.</li>
<li>Heat milk with saffron for 20 seconds in microwave.</li>
<li>In a thick pan add ghee and khawa mixture and cook on low heat with constant stirring.</li>
<li>Add in heated saffron milk after a minute or two.</li>
<li>Cook the mixture till its semi solid with constant stirring</li>
<li>Take it off the heat and let it cool for 5 minutes.</li>
<li>Slice the pistachios </li>
<li>Make small balls of the mixture and press each ball with pistachio slice on its top.</li>
</ul><p><strong>Notes</strong><br />
When making pedhas from the mixture, it should be warm. If its too cold, it might be difficult to make the smooth shape.<br />
Stirring the khawa mixture continuously while cooking is important as the mixture is susceptible to sticking to the pan and burning.<br />

Recently I discovered magic and power of library system here. The minute I stepped into library I knew I am going to pick lot of books and variety of topics. I must have spent more than 5 hours that week just browsing through books and selecting what all I like. I got this book on the desserts and it had this recipe. First time I made, I tried word to word with few changes in ingredients but this time I changed the proportion of butter, maida as well. I loved how nice and crispy it turned out. We are now set for atleast a week of 4pm snacks :)<br />

3/4 Cup Butter<br />
2.25 Cup Sugar<br />

<br />
<strong>Method</strong> <ul><li>Preheat oven to 350F/175C.</li>
<li>Beat butter and sugar together until combined, about a minute.</li>
<li>Add in Maida, baking powder, salt and lemon zest and beat again till mixed well.</li>
<li>Add in one egg at a time and beat till mixed well.</li>
<li>Add in chopped almonds, pistachios, craisins and saunf and again mix well.</li>
<li>Dust the flat surface with little bit of maida and pull out the mixture and knead and shape it into two 12 inch logs that are just over 1 inch in height.</li>
<li>Line a baking pan with the parchment paper and transfer the logs into it.</li>
<li>Bake at 350F for 30 minutes. Pull the logs out of oven and let them cool down for around 10 minutes</li>
<li>Using sharp knife, slice the log diagonally around 1/2 inch thick slice.</li>
<li>Transfer the logs into pan with cut side facing up, bake at 350F for another 25 minutes.</li>
<li>Let the biscotti cool and then transfer into the container.</li>
</ul><p><strong>Notes</strong><br />
I used almonds, pistachio and craisins but really you can use any nuts and dry fruits. In fact this time I forgot to add saunf but last time I made this, I had added it and it gave nice taste and everyone loved it :)<br />
I used my kitchenaid standing mixer to beat in everything, as it was much easier that way than the hand mixer. I was looking to bake something new and yet something that would be ready in couple of hours. This turned out amazing twist to the lemon bars I had made last month. Since with lemon bars I felt the presence of egg was too strong for my liking, I was interested in something that would use less egg and that's when I decided to create these using fusion of cheese cake and bar. I cant believe that this was my so far the most bold *experiment*given that I was to serve the friends who were coming over for dinner right away without any margin to recover but thankfully this turned out really great.<br />

<strong>Ingredients</strong><br />
1 Cup Butter<br />
2.25 Cup Sugar<br />
1.5 Egg<br />
1.5 cup Maida<br />
2.5 Spoon Vanilla Essence<br />
2.75 Cup Pecans<br />
12Oz Cream Cheese<br />
2 Pears<br />
1/2 Spoon Cinnamon Powder<br />
<br />
<strong>Method</strong> <ul><li>Preheat oven to 350F/175C.</li>
<li>Using handheld mixer cream the butter till very fluffy and light.</li>
<li>Add in 2/3 cup of sugar and cream further.</li>
<li>Add in 1 spoon of vanilla essence, sieved Maida and cream further.</li>
<li>Mix in the coarsely chopped nuts.</li>
<li>Grease two baking pans of 6inch in size and spread half of mixture evenly in each pan.</li>
<li>Bake in oven at 350F/175C for 22 minutes.</li>
<li>Let the base layer cool down in the pan itself for about 30 minutes</li>
<li>After 30 minutes, with the handheld electric mixer cream the cream cheese till soft and even.</li>
<li>Add in 1.5 cup sugar, egg and remaining 1.5 spoon of vanilla essence in the cream cheese and cream till soft and even.</li>
<li>Cut the pears such that their center is removed and then slice them. Add in 1 Spoon of sugar and mix well. Keep aside.</li>
<li>Preheat oven to 375F/190C.</li>
<li>Spread the cream cheese mixture evenly in both the baking pans half in each.</li>
<li>Spread the pear slices on top of this mixture.</li>
<li>Sprinkle cinnamon and remaining (around 1 spoon of) sugar evenly on top of pears.</li>
<li>Bake in the oven over 370F/190C for about 35 minutes.</li>
<li>Take out of the oven. Let it cool for 30 minutes and then transfer it to fridge for at least another hour and then serve by making square pieces.</li>
</ul><p><strong>Notes</strong> <br />
I know 1.5 egg is hard to measure :) but I tried using the mixture with 1 egg and 1 cheese packet but it wasn't enough to cover both pans. For the next egg, I beat the egg and took half the quantity. But in case you are baking this in single pan you could use 8-9 inch pan and use 1 egg with 1 packet of cream cheese. Note you would need to use 1 cup of sugar in that case.<br />
I used pecan nuts because I had them available at home, but you can theoretically use any nuts, they give nice crunch and crisp taste.<br />
I used little overripe pears so they turned out nice tender and I didn't have trouble while making pieces of the dessert.<br />

<strong>Method</strong> <ul><li>Wash bhendi and cut their heads.</li>
<li>In a pan of hot oil, fry these till light brown in color. Pull them out of oil on the tissues.</li>
<li>Once all bhendis are fried, take very little oil in the pan and keep it going on the heat.</li>
<li>Add in the coarsely chopped garlic and stir for a minute.</li>
<li>Add in fried bhendis and salt to taste and stir for another 3-4 minutes till crispy.</li>

Last week when i decided to make paratha, I didn't have green chili in the fridge so I decided to use the sweet bell pepper instead. When I minced it in the mixer, the idea suddenly came to me to use mutter as well and make this tasty mixture. When the parathas were done and we tasted it right away it was tasty and crispy. But when we actually sat down for lunch, that's when the parathas had cooled down a bit and they had started to get soggy and somewhere too difficult to eat without creating mess. So in the evening I used the remaining mixture on the bread along with some tomatoes and cucumber and it made perfect sandwich. The taste of spread comes out better too. So I think this one definitely works better as spread on bread, burgers or as side chutneys than paratha stuffing. <br />

I used frozen peas without thawing them but fresh peas could be used too.<br />

But thankfully I had rough notes from then that I had sent to mom. So it was pretty easy to recollect. This time it came out perfectly and I did big photo session of them :) so I cannot find any excuse to not post this. This recipe has to be easiest to make and something that will get you lot of appreciation in return.<br />

6 Cup Cashews<br />
1 Cup Milk Powder<br />
2 Cup Sugar<br />
Pinch of Cardamom Powder<br />
Silver Leaf<br />

<strong>Method</strong> <ul><li>Grind cashews into fine powder in the mixer</li>
<li>Mix the cashew powder and milk powder together</li>
<li>Heat tawa till very hot and then take off the heat</li>
<li>Add the cashew and milk powder mixture into the tawa and keep stirring till the mixture is warm to touch. Keep aside in a bowl</li>
<li>Heat 1.5 cup water with sugar to make 2 string syrup.</li>
<li>Add in the cardamom powder and the sugar syrup in the cashew mixture and mix well. Knead to get the soft dough.</li>
<li>On a baking pan or any big plate, lay out butter paper and put the dough and press it hard and spread the mixture.</li>
<li>Apply the silver leaf and let the mixture cool for atleast couple of hours.</li>
<li>Cut the kaju katlis and serve.</li>
</ul><p><strong>Notes</strong><br />
Getting the sugar syrup right and kneading well is one key for the success.<br />

<strong>Method</strong> <ul><li>Preheat oven at 325F/160C</li>
<li>Mix together egg, sugar and vanilla essence.</li>
<li>Add in oil and milk and whisk the mixture over medium speed.</li>
<li>Sieve maida, coco powder, baking powder and baking soda couple of times to form homogeneous mixture.</li>
<li>Add the sieved contents and salt in the egg-oil-milk mixture and whisk on low speed till well combined about 2 minutes</li>
<li>Warm 1 cup of water with coffee in microwave for about a minute.</li>
<li>Add the coffee to the cake mixture and whisk on low speed for another 2 minutes.</li>
<li>Line around the cupcake pan with around 14 cup cake liners and fill them with the cake mixture about 3/4th level in each.</li>
<li>Bake in the oven for 18 minutes.</li>
<li>Allow the cakes to cool off for at least an hour and then serve with frosting and optionally filling</li>
</ul><strong>Notes</strong><p>I didn't use the filling but <a href="http://mycookingexperiments.blogspot.com/2011/11/chocolate-ganache.html">chocolate ganache</a> would be great option.<br />

<li>Sieve together icing sugar, coco powder together.</li>
<li>Add it to the shortening and mix well with the hand mixer till ingredients mix in properly.</li>

2 Fish Fillets (180g boneless)<br />
1 Onion<br />
4-5 Garlic Cloves<br />
1 Spoon Ginger<br />
1/4 Spoon Red Chili Powder<br />

1/4 Spoon Black Pepper Powder<br />
1/4 Spoon Cinnamon Powder<br />
1/4 Spoon Cloves Powder<br />
1/2 Spoon Coriander Powder<br />
1/4 Spoon Garam Masala<br />
1/4 Cup Cilantro<br />
4-5 Small Sweet Bell Peppers<br />
1/2 Lemon<br />

<strong>Method</strong> <br />
<ul><li>Smash the fish fillets and add in black pepper powder, red chili powder, cinnamon powder, cloves power, coriander powder, garam masala and salt.</li>
<li>Add in finely chopped onion, green chilies, bell peppers and cilantro.</li>
<li>Squeeze lemon juice in the mixture.</li>
<li>Mix well and prepare kabab rolls.</li>
<li>Heat tawa and add in oil, and shallow fry the kababs over medium heat from all sides till they are brown.</li>

I thawed the frozen fish in microwave with auto defrost for the fish this time and it works wonders. I didn't have to wait long time for fish to thaw and could easily make this as a tea time snack when we both were so hungry.<br />

Everyone was asking for recipe so here it is. (Note I had this in my drafts for 2 months and finally getting around to put it on the blog :))<br />

2 Big Potatoes<br />
1.5 Cup Paneer<br />
3 Handful Spinach Leaves<br />

4 Garlic Cloves<br />
2 Spoon Chaat Masala<br />
1 Spoon Aamchur Powder<br />
1/4 Cup Breadcrumbs<br />

<strong>Method</strong> <ul><li>Pressure cook potatoes and let them cool off. Peel off cover and mash them into big bowl.</li>
<li>Microwave 4 cups of muttor for 3 minutes.</li>
<li>Add the muttor and spinach leaves to mixie and grind to fine paste.</li>
<li>Add in coriander leaves, green chillies, garlic cloves and salt. Grind again to fine paste. Pour the paste into the bowl with potatoes</li>
<li>Add grated paneer, chaat masala, aamchur powder and breadcrumbs and mix well.</li>
<li>Microwave remaining 2 cup muttor for 2 minutes and add it to the bowl and mix well.</li>
<li>Make small balls, flatten them, press in a cashew and shallow fry the kebabs on medium heated tawa till dark brown on both sides</li>

The mixture was little sticky when I used it immediately. But I had remaining paste stored in fridge and when I used it directly out of fridge it was easier to fry them without disturbing its shapes.<br />
Also note that unlike other recipes where it yields product for around 4 people, I made this for party of around 12 people as starter.<br />
I used fresh paneer. Boiled 1 liter of 2% reduced fat milk and adding one lemon's juice in it. Since the time we started bringing Tilapia fillets, I have always grilled them. I am fish lover and its been a while since i had fish curry. Since i am trying to not eat too much coconut, I didnt want to make our traditional fish curry so I came up with this one. Turned out awesome. Reminded me of my favourite fish curry from Nandini restaurant in Bangalore that i use to have frequently around 10 years back.<br />

500gm Fish<br />
1 Big Onion<br />
2 Tomatoes<br />
1 Spoon Tamarind<br />
1/2 Spoon Black Pepper<br />

1/4 Spoon Coriander Powder<br />
1/4 Spoon Garam Masala<br />

<strong>Method</strong><br />
<ul><li>Marinate the fish with 1/4 Spoon Red Chili Powder, Coriander Powder and Salt.</li>
<li>In mixie, add tamarind, onion and black pepper leaving 6-7 aside. Grind to fine paste. Keep aside.</li>
<li>Heat oil in tawa and add in fish pieces. Let them cook for a minute.</li>
<li>Flip the fishes and cook for another minute. Take out of the tawa and keep aside.</li>
<li>In same oil add in onion paste and saute it till the raw smell from it goes away and you can only smell pepper in it.</li>
<li>In mean time grind tomatoes, garlic, ginger in mixer and make paste.</li>
<li>Add tomato paste, jeera powder, garam masala, turmeric powder, remaining black pepper and salt to onion and cook for 5 minutes with constant stirring.</li>
<li>Add in fish and lightly mix everything together. Cook for 2-3 minutes.</li>
<li>Sprinkle finely chopped coriander leaves and serve.</li>

I used cleaned boneless Tilapia fillets each cut into four pieces but you can use any fish in any form but boneless has its own fun :)<br />

I had not cooked this fish anytime earlier and its been while since we had fish. I wanted to switch to diet that has more fish and vegetables instead of any other meat (chicken, prawns or crabs) so we got this from Costco. They sell it skinless and boneless big fillets so i instantly thought of trying grilling them. Yesterday we had barbeque planned and so it was perfect time to experiment.<br />

<strong>Method</strong> <ul><li>Apply salt, red chilli powder, jeera powder, coriander powder, garam masala and lemon juice to the fillets.</li>
<li>Massage the fillets by rubbing these spices and lemon juice for couple of minutes. Keep aside for 45minutes to an hour</li>
<li>Heat the grill and apply oil spray on both sides on the fillets and grill them for about 3-4 minutes each side.</li>

If you don't have grill, you could cook them on pan over medium heat too. Grill gives nice finish.<br />
I served this with <a href="http://mycookingexperiments.blogspot.com/2007/11/pudina-chutney.html">mint chutney</a> that i made from fresh mint from my patio garden as starter and ate most of it :) In fact out of two fillets only half i could save for next day and click photo :) I used that half in salad with the mint chutney as dressing. <strong>Method</strong> <ul><li>In a half liter milk add in sugar and blend it in mixer.</li>
<li>In a bowl take a cup of milk and bring it to boil. Add in saffron and mix well till the milk turns bright yellow.</li>
<li>Mix remaining milk and the boiled milk with milk that was sweetened earlier.</li>
<li>In a mixer make pistachio powder and mix it in the milk.</li>
<li>Add in cream and mix well. Keep the mixture in the fridge for an hour.</li>
<li>Add the mixture to the ice-cream maker and let it set.</li>

Its important to boil the milk and add in the saffron for the flavor to mix well with the milk.<br />

<li>For Vada: Fry them by dropping spoonful of batter into the hot oil, brown on both sides over medium heat</li>
<li>For Dosa: Mix in water to thin it out, drop it on greased pan and spread it. Cook till both of sides till brown.</li>

If you are going to make vadas, its better to make them immediately after making the batter otherwise they might get oily. <strong>Method</strong> <ul><li>Grate bananas and add finely chopped garlic, grated ginger, black pepper powder, 1/4 spoon saunf and salt to it. Knead well.</li>
<li>Make small round balls and fry them in oil over high flame till golden brown in colour. Keep aside.</li>
<li>In a mixie, add cashews, black pepper, remaining 1/4 spoon saunf, cinnamon and grind it to fine powder</li>
<li>Add in onion and grind again.</li>
<li>Add a cup of milk and make smooth paste.</li>
<li>Heat a spoonful of oil and add in grinded paste, 1 cup water and remaining 1 cup milk. Cook over medium heat till mixture starts thickening.</li>
<li>Add in salt, sugar and koftas and let it simmer for another 2 minutes.</li>

Bananas were such a good choice for koftas, they get crispy quickly and they dont soak oil unlike potato or eggplant.<br />
I tried to give two distinct flavors to kofta and gravy. <strong>Method</strong> <ul><li>Make cubes of Paneer and shallow fry them till golden in color. Keep aside.</li>
<li>Cook the potatoes in cooker till completely done.</li>
<li>In mixer make fine paste of garlic, ginger and green chillies.</li>
<li>Mix the ginger-garlic-chilli paste, smashed potatoes, black pepper, finely chopped coriander and salt to taste.</li>
<li>Add in Paneer cubes and make the patties out of these mixture.</li>
<li>Mix maida with water to form thin paste. Dip the Patti in the mixture and fry it in oil over medium heat till brown on both sides.</li>
<li>On each burger bun, put onion, tomato and cheese slice. Stack up Patti and lettuce and close the bun and serve with ketchup.</li>

I didn't use mayo or anything in the burger itself, instead served it on side to dip it in. <strong>Method</strong> <ul><li>Wash methi and add it to the mixer</li>
<li>Add ginger, garlic, green chilli and half cup of water. Crush it to fine liquidy paste.</li>
<li>Pour it into the plate, add in maida, wheat flour, salt and knead soft dough.</li>
<li>Add couple drops of oil and knead again for a minute. Keep aside for half an hour</li>
<li>Heat oil in pan, roll small puris from the dough and fry them till light brown on both sides.</li>

Making very fine paste is important because otherwise the pieces will come out while rolling and the puris would remain flat.<br />

I was on lookout for something more like pound cake yet not something plain for Ajoy's birthday celebration. He enjoys plain cake more than anything so something based of that yet something more richer would make perfect for the occasion. I wanted to either use lemon or orange especially after seeing all these food networks making use of their zest. So when i found a recipe for this cake in one of the books i have, i modified it bit to his taste and came up with this.<br />

175g Apricot<br />
1 Cup Almonds<br />
1.25 Cup Pistachios<br />
2/3 Cup Sliced Almonds<br />
2 Cup Sugar<br />
1 + 1/3 Cup Butter<br />
1.25 Spoon Baking Powder<br />
3 Eggs<br />
1/3 Spoon Salt<br />
1 big Lemon<br />

<strong>Method</strong> <ul><li>Preheat oven to 180C/350F</li>
<li>In a bowl, blend butter and 1.5 Cup sugar together till smooth</li>
<li>Sieve together maida and baking powder 3-4 times.</li>
<li>Add it to the butter-sugar mixture.</li>
<li>Add in eggs, salt, zest of the lemon and 1/2 cup of warm water and blend till smooth.</li>
<li>Fold in chopped apricot, 1 cup almonds powdered and 1 cup pistachios chopped.</li>
<li>Line the loaf pan or any other cake pan you want to use with parchment paper on bottom as well as sides and spoon all the batter in it.</li>
<li>Put remaining pistachios and sliced almonds over the mixture and press it lightly over the cake.</li>
<li>Bake the cake in oven for 75 minutes on 180C/350F, covering the top with foil after around 50 minutes.</li>
<li>Take it out of the oven and let it rest for 10 minutes.</li>
<li>In the mean time, over medium heat with constant stirring, cook lemon juice of the lemon with remaining sugar till sugar dissolves completely an mixture bubbles up slightly.</li>
<li>Pour the mixture over the cake and then take out the cake on wire rack to let it cool completely.</li>
</ul><p><strong>Notes</strong><br />
Covering the top midway into baking helps not overcooking the nuts and burning them. Last week I had got strawberries to make jam :) But the week was hectic and i couldn't get myself slogging for an hour or two in kitchen so instead yesterday i decided to make icecream instead. I was little skeptical for this was first time i was trying it out and serving without knowing how it is going to turn out added to the nervousness. Glad everyone enjoyed it and that surely calls for this post.<br />

<strong>Ingredients</strong> <br />
5 Cup Milk<br />
3.5 Cup Cream<br />
1.5 Kg Strawberries<br />
4 Cup Sugar<br />
1/2 Lemon<br />
<br />
<strong>Method</strong> <ul><li>In a mixer, blend 1Kg of strawberries and sugar together till smooth. Transfer it to bowl.</li>
<li>Add in milk and whisk till smooth.</li>
<li>Add in cream and lemon juice and again whisk till consistent.</li>
<li>In ice-cream maker pour this mixture in batches according to your ice-cream maker's capacity.</li>
<li>Chop remaining strawberries, and when ice-cream is almost set ad them to the ice-cream and let the ice-cream maker set the ice-cream.</li>
<li>Freez for another hour or two to get the best results.</li>

100g Sabudana Poha<br />
1 Cup Peanuts<br />
2.5 Spoon Red Chilli Powder<br />
1 Spoon Jeera Powder<br />

<strong>Method</strong> <ul><li>In a mixie add in red chilli powder, sugar, salt, jeera powder and grind till fine powder. Add this to a big bowl</li>
<li>Heat oil in a pan and fry the peanuts till light brown. Add them to the spice mixture in bowl and stir</li>
<li>In the same oil fry sabudana poha, few at a time. After each batch is fried add it immediately to the spice mixture an give it a stir.</li>

Friday I when Ajoy asked me to make Chicken Rolls, I made this one for stuffing. I didn't want to make the red gravy so threw in some coriander and spices to go along with it. When he tasted the chicken, he was like this is out of world :) On the other hand, this was such a minor twist to how I cook chicken normally that I didn't even think about clicking photo and putting it as a blog post. My thought was because I made chicken after such a long time, probably he got too excited. But then, when we decided to invite friends for dinner last sunday, he was like you have to make that chicken again. After making it once again, and he giving same reaction after tasting it, I decided to click photos and may be post it. Now that even friends have same thoughts about the dish, I had to post the recipe :)<br />

<strong>Ingredients</strong><br />
1/2 Kg Boneless Chicken<br />
1 Spoon Jeera Powder<br />
1 Spoon Coriander Powder<br />
1/2 Spoon Garam Masala<br />
1 Spoon Red Chilli Powder<br />
1 Spoon Black Pepper Powder<br />
3-4 Garlic Cloves<br />
1 Spoon Ginger Paste<br />
1 Big Tomato<br />
2 Cup Coriander Leaves<br />
Salt to taste<br />
Oil<br />

<strong>Method</strong> <ul><li>Marinate the chicken with salt, jeera powder, coriander powder, garam masala, black pepper powder and keep aside for half an hour.</li>
<li>Heat oil in a pan and add in marinated chicken. Cook on medium high till chicken browns a bit.</li>
<li>Meanwhile, in mixer mince tomato, garlic and ginger paste together.</li>
<li>Add in coriander leaves and grind it to fine paste.</li>
<li>Add it to the chicken, add some salt and cook till it reduces to dry gravy.</li>
</ul><p><strong>Notes</strong><br />
You can use this to make chicken rolls with onion or just it as a side dish with rice or roti. Since we came here, we weren't able to get the puris for making <a href="http://mycookingexperiments.blogspot.com/2008/01/spdp-shev-batata-dahi-puri.html">SPDP - Shev Batata Dahi Puri</a> which is among favorite chaat items for Ajoy. Using paani puri's puri for SPDP doesn't seem right and I am sure it wouldn't taste as good either. So I decided to give try making these puris. Tried few times and now I think I have got the recipe right which gets best results, and is certified by many friends who had chance to taste :) <br />

<strong>Ingredients</strong><br />
1 Cup Maida<br />
2 Spoon Rawa<br />
1/4 Cup Melted Butter<br />
Oil<br />

<strong>Method</strong> <ul><li>Mix Maida, Rawa and salt together.</li>
<li>Add in melted butter and mix well.</li>
<li>Add in 1/4 cup water and knead soft dough.</li>
<li>Grease the dough with 1/4 spoon oil and cover and keep aside for an hour.</li>
<li>Make round balls and roll them thin and big. Cut using cup or cookie cutter into small round shapes.</li>
<li>Heat oil and fry the puris on both sides over medium flame till light brown on both sides. Take out on kitchen towel and let it soak oil from puris.</li>
<li>Heat oven to 350F/175C and bake the puris in it for 10 minutes.</li>
</ul><p><strong>Notes</strong><br />
I have noticed that if you roll the puris thin then they wont bubble up and that's how you want them for SPDP.<br />
